Epicurean Cakes

 

The term "butter cake" is applied to any cake containing shortening, whether or not the shortening is butter. This Foundation Butter Cake is economical yet unusually tender and delicate. It may be varied indefinitely without changing the ingredients, by being baked in various shapes and sizes of pans, and put together and iced with different fillings and frostings, for which recipes are given in the sections on icing and fillings.

A Delightful variety of tea cakes can be made by baking the Foundation Butter Cake in small pans and decorating it with colored frostings, nuts, candies, or icings in fancy designs.

An authentic sponge cake contains no shortening and depends on its lightness upon the air, which is beaten into the eggs. When whole eggs are used in such a cake, the name "sponge cake" is applied; when only whites are used, the cake is called "angel cake."
