Norwegian Fattigmann Cookie Recipe

Fattigmann or Fattigmand Cookies are a tasty treat, often made during the holiday season. Like the Rosettes, these delicious Norwegian cookies are deep fried so if your making Rosettes, keep the oil and make some Fattigmann using the same oil.

Fattigmann Ingredients

  • 2 eggs, beaten lightly
  • 1 tablespoon of sugar
  • 3 tablespoons of sweet cream or butter
  • 1 3/4 cups of flour
  • 1 teaspoon of vanilla
  • pinch of salt

Other requirements

  • Extra Virgin Olive Oil or other cooking oil
  • Deep Fryer
  • Grated scoop or tongs to remove the Fattigmann from the fryer
  • Confectioner's Sugar

Directions

Fattigmann Cookie Cutter

Lightly beat the eggs and stir in the sugar, sweet cream or butter, flour, vanilla and salt. This should make a soft dough. Roll out on a flour covered hard surface (a large wooded cutting board works great for this) to a thin layer.

Using a Fattigmann cutter (see illustration) cut the dough by rolling the Fattigmann cutter. Fry in hot oil until lightly browned. Cool on cookie rack with paper towels place on top to soak up any residual oil from the Fattigmann cookies. Sprinkle with powered confectioner's sugar (sifter works well for this) and enjoy.

Store in an air tight container.
