Originally published in Denmark, this book is a collection of authentic Danish recipes for baked goods of every variety. It was written to introduce the English-speaking world to Danish home baking—of which the Danes are rightfully proud.

Whether your preference is for simple little cookies and tea cakes or elaborate coffee rings, rich pastries, and whipped-cream-filled delights, you're sure to find many here that will appeal to you and that you will want to try.

First, there are cookie recipes—Vanilla Wreaths, Jutlanders, Strassbourgers, Oatmeal Macaroons, Currant Cookies, Rusks (in Denmark, often served with hot fruit soups), Meringues, and a wide assortment of Christmas cookies. Then there are recipes for little party cakes—Medals, Custard Pies, Cream Puffs, Raspberry Tarts, Apple Squares, and a large selection of cakes made from Puff Paste (Danish many-layered dough).

An excellent basic dough recipe is given for buns, rolls, and bread. There are recipes for Spandauers, Triangles, Apple Combs, Carnival Buns, Horns, Plaited Rolls, Tea Horns, and a traditional Danish Coffee Ring.

Of loaf and layer cakes, there are Soda Cakes, Jam Roll, Biscuit Cake, Tea Cake, Mocha Cake, Nougat Cake, Honey Cake, Nut Cakes, and many others. Some of the desserts presented do not require baking—Rum and Lemon Delights, puddings, dessert pancakes, Rice Fritters, and Whipped Cream Cones.

Finally, to top it all off, there are recipes for homemade crackers to be eaten with cheese—Straws, Medallions, and Petit-Fours—and other cheese pastries and pies.

If you enjoy baking (and eating sweet things), this book is both tempting and instructive. Each recipe includes complete instructions, lists all ingredients, and tells you precisely what quantity it will make.

There are suggestions for variations to encourage you to experiment on your own and a table of weights and measures (for flour, sugar, butter, cocoa, and the other main ingredients) to help you convert volumes into either grams or ounces.

The attractive photographs will give you an idea of what these delicious baked goods look like when they're done.
